Crust 150 gm digestive biscuits 90 gm butter
Cheesecake filling 500 gm cream cheese 1/2 cup sugar 2 eggs (A) 1 tsp vanilla essence 1 cup pumpkin (steamed and mashed) 1/4 tsp grd cinnamon pinch of grd nutmeg & salt
Topping 1 1/2 cups sugar (perlu dikurangkan sbb sgt manis) 2 large egg white 1/3 cup water 2 tsp light corn syrup 1/4 tsp cream of tartar 1 tsp vanilla extract
Cara-cara 1. Grease and line muffin tin. 2. Beat cream cheese and sugar. 3. Add eggs and vanilla. 4. Spoon abt 2 tbsp of cream cheese batter into muffin tin. 5. Add pumpkin, cinnamon, nutmeg and salt into remaining cream cheese batter. 6. Spoon into muffin tin. 7. Bake at 150C for 15 mins.
To make topping 1. Whisk egg whites, water, corn syrup, cream of tartar in metal bowl. 2. Set bowl over saucepan over bareley simmering water. 3. Use hand mixer, beat on medium speed unril becomes fluffy, abt 4 mins. 4. Increase speed to high until mixture becomes thick, abt 3 mins. 5. Remove bowl from saucepan. 6. Add vanilla and continue beating until mixture is completely cool, abt 5 mins frvg.
